Pineapple Pork - crockpot recipe



I am not normally a big pork fan, but this recipe has a way of changing that. Pork and pineapple together just has a melody that sings to the soul in a major key.

Many people call this type of dish Hawaiian. I've never been there so I can't say if it's Hawaiian or not (wonk wonkkkk).

Use whatever type of pork roast you desire. I used a pork shoulder because it was on sale, but really, I can't imagine any other type of pork roast being unsuitable.

Pineapple Pork - slow cooker recipe


Ingredients:


1 small Pork roast
1 onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon all spice
1/2 teaspoon thyme

1 can crushed pineapple
1/2 teaspoon red pepper flakes
1 teaspoon ground ginger
1 cup of chicken broth
2 tablespoons soy sauce
1/4-1/2 cup brown sugar (the 1/2 cup is if you like it really sweet)

Method:


Mix together the salt, pepper, thyme and all spice in a small bowl. Rub it all over your pork roast and leave sit for 5-10 minutes (Or if you were REALLY prepared, you can leave this sit overnight even!).

Brown the meat in a non-stick pan, about 3-5 minutes per side, until it's slightly browned. Place the roast in your slow cooker.

Mix together the remaining ingredients and pour over the roast. Turn the slow cooker on low for 6-8 hours, or on high for 3-5, depending on the heat of your slow cooker.

Once the roast is cooked, shred it with two forks. Taste and season with additional spices if desired. You can also thicken the sauce if you'd like.

Serve with rice or noodles and enjoy!
