Pork chops are one of my favorite things to slow cook. They are cheap, easy to work with, and always come out juicy and that fantastic 'melt in your mouth' type of texture. Pork is a sweet, succulent meat that kids love, too.
Sometimes, I add a few tablespoons of dijon mustard to this recipe and it gives it a bit of a zing!
Pork chops with creamy mushroom sauce
4 pork chops (bone in work best)
1 tsp thyme
1 tsp all spice
1 tsp salt
1/2 tsp pepper
2 tbsp olive oil
1/2 large onion, diced
1 cup sliced mushrooms
1 tbsp thyme
3 tbsp flour
1 cup beef broth
1 cup milk
1 tbsp Worcestershire sauce
A few tbsps red wine (optional)
Method:Rub thyme, all spice, salt and pepper all over your pork chops and allow to sit for at least 10 minutes.
Warm 2 tbsp olive oil in a pan and brown the pork chops about 3 minutes per side. Take out of the pan and place into the slow cooker.
Add onions and mushrooms to the pan and saute until they are slightly browned. Add the tablespoon of thyme and stir for a minute or two, until the thyme is fragrant.
Add the flour to the pan and stir until combined and it soaks up most of the mushroom liquid...just a few minutes.
Slowly add beef broth, milk and Worcestershire sauce. Allow to simmer until sauce slightly thickens, about 3 minutes. Pour the sauce over the pork chops.
Set the slow cooker to low for 6-8 hours, or 3-5 hours on high, depending on the heat of your slow cooker.
Taste and season (mine needed additional salt!).
Serve over rice or noodles and enjoy!
