Super side - Roasted potatoes - crock pot recipe
What??? Roasted potatoes? Surely you're joking, Shawna. Nope! This is a great side dish that you'll love.
Although you won't have a crunchy potato dish, you will love how tender they are and very savory. Try serving these with a grocery store roasted chicken for a busy day meal!
I've mentioned the amount of spices I typically use for this recipe, but you can add more of some and less of others to suit your taste.
Roasted Potatoes - Slow cooker recipe
3 large russet potatoes, cut into large cubes or wedges
1/4 cup of water
1/2 tsp Garlic powder
1 tsp Salt
1 tsp Pepper
1/4 tsp Oregano
1/4 tsp Thyme
1/4 tsp Rosemary
A pinch of Dill if you like it
4 tablespoons of butter
Place potatoes into bottom of slow cooker. Put water in next.
Mix all spices you want to use in a bowl together. Then, sprinkle generously all over your potatoes. Do not stir!
Add the butter over top of potatoes by slicing thinly as evenly as possible.
Turn crockpot to low for 6-8 hours, or high for 3-4, depending on the heat of your cooker.
