Lazy peroghy casserole a la crockpot

Hello again everyone! I am BACK! And it's the FALL! HOORAY!!!! The most wonderful time of the year! It's also my favorite time to start up the crockpot again!!!!

This is a recipe I've been pondering for a while, but never made...yet. I've read other recipes like it, and keep thinking about how to make it stand out a bit more. I mean, most of us love mashed potatoes and cheese, but how do you prevent it from being bland and dull? So, here is my recipe off the top of my head...and I'm going to make tomorrow and hope it turns out, ha!

Lazy Peroghy Casserole


Ingredients:

6-8 medium potatoes, boiled til soft
Salt/pepper/garlic powder
2 cups of shredded cheese
No boil lasagna noodles
2 cups cottage cheese
2 eggs, beaten
1 onion, fried in butter til browned
1/2 pound of bacon, fried and diced

Method:

1. Wash and peel your potatoes; boil until very soft. Drain, mash with butter. Add salt, pepper and garlic powder to taste. While still warm, mix in 1 cup of the shredded cheese.

2. Dice up the onion and fry in a pan with lots of butter or margarine until translucent or slightly browned, depending on your taste.

3. Cook up your bacon - or, take it out of the pre-cooked package if you're extra lazy and crumble it up, yummers!

4. Mix up the cottage cheese with the beaten eggs and get ready to start layering!

5. Start layering in the crockpot! Start with potato, then a layer of noodles. Then a layer of cottage cheese, regular cheese and bacon. Repeat.

Repeat until all the goods are used...then put the remaining cup of cheese on top and voila.

Cook that sucker on low for 6-8 hours, or high for 3-5 depending on the heat of your slow cooker.

Serve with sour cream, warm fire places and cozy blankets.
